A recent clinical study revealed that following a low-fat vegetarian diet for 16 weeks contributes to reducing liver fat, losing weight, and improving blood sugar levels in individuals with type 2 diabetes, without the need to count calories or restrict food quantities.
The study results showed that participants who followed the diet lost an average of about six kilograms, equivalent to 6.6% of their body weight, while liver fat decreased by 33%, and the volume of visceral fat surrounding internal organs reduced by approximately 290 cubic centimeters.
Participants recorded improvements in indicators of blood sugar control, as the level of glycated hemoglobin (HbA1c), which reflects average sugar levels over the previous months, decreased by one percentage point, along with improved body sensitivity to insulin and the function of beta cells in the pancreas responsible for its production.
The results also showed a decrease in total cholesterol and harmful cholesterol (LDL), as well as a reduction in the accumulation of compounds known as "advanced glycation end products" (AGEs), which are associated with tissue damage and insulin resistance.
The diet followed by participants was based on consuming vegetables, fruits, whole grains, and legumes, allowing them to eat until they felt full, without imposing restrictions on calorie intake.
Carbohydrates made up about 75% of the total calories in the diet, compared to 15% for protein and 10% for fats.
The lead author of the study, Dr. Hanna Kahliova, director of clinical research at the Physicians Committee for Responsible Medicine, stated that the results suggest that focusing on food quality and choosing healthy plant-based foods may help reduce liver fat accumulation and improve the pancreas's ability to produce insulin, without the need to count calories or weigh food portions.
